Brewing Method
Warm the Teaware: Use a 150ml white porcelain gaiwan or purple clay teapot. Rinse with boiling water to preheat.
Rinse the Tea: Add 1 sachet (5g) of tea leaves, pour in boiling water, and discard immediately (1 rinse) to awaken the tea’s vitality.
First Infusion:
Steep for 5 seconds after refilling with water. The liquor will be clear and golden. Inhale the floral fragrance from the lid—this infusion can be sipped or used to further warm the teapot.
Brewing Cycle:
Infusions 1-3: Use 95°C-100°C water, pour from a height, steep for 5-8 seconds. Expect a bright golden liquor with intense floral notes and initial sweetness.
Infusions 4-6: Extend steeping to 10-15 seconds for a richer body, stronger sweetness, and layered honey-floral interplay.
Infusions 7+: Gradually increase steeping time by 5-10 seconds per brew. The final infusions evolve into a crisp, rock sugar-like sweetness, lasting beyond 15 rounds.
Serving Tips:
Avoid over-steeping to prevent bitterness. Serve hot to maximize aroma.
Pair with light snacks like rice cakes or nuts to accentuate the tea’s sweetness and complexity.
