Brewing Method (Core Steps)
Teaware:
Recommended: 150ml white porcelain gaiwan or glass teapot (to showcase the tea’s color).
Water & Tea Ratio:
Temperature: 90–95°C (let boiling water cool for 30 seconds).
Dosage: 3–5g (about 1/3 of the gaiwan’s capacity).
Brewing Steps:
Rinse & Awaken:
Preheat teaware with boiling water. Add tea leaves, pour water, and discard immediately (1 rinse).
Infusions 1–3:
Pour boiling water from a height, steep for 3–5 seconds, and decant. Expect bright red liquor with pronounced floral notes.
Infusions 4–6:
Extend steeping by 2–3 seconds per brew for richer body and lingering sweetness.
Later Infusions:
Gradually add 5 seconds per brew. Final infusions offer honey-like sweetness.
Winter Simmering (Optional):
Use 5g of tea. Add to cold water, bring to a boil, then simmer on low heat for 1–2 minutes for a robust, warming brew.
Key Tips:
Tea Separation: Use a strainer or quick-brew cup to avoid bitterness from over-steeping.
Pouring Technique: Pour water gently along the vessel’s edge to minimize leaf agitation, ensuring clarity.
Important Notes
Storage: Store sealed in a dark, dry, odor-free environment. Shelf life: 5 years.
Water Quality: Spring or purified water recommended to enhance flavor.
Avoid: Tap water or prolonged steeping, which may dull the tea’s character.
